Ingredients

  • sea salt and freshly ground black pepper
  • 1 whole pork loin (about 1 ½ pounds)

How to prepare

  1. Preheat oven to 320°F.
     
  2. Mix all the ingredients, except the meat, to form a paste then rub it all over the pork loin.
     
  3. Roast the pork in the pre-heated oven for 3 hours, or until the meat is tender and the pork has developed a lovely brown crust. Turn the roast over a few times during the cooking process.
     
  4. After taking the meat out of the oven, let it rest for 10 min before carving.
