What is lycopene? |
It is a carotenoid pigment found in high concentration in tomatoes. Tomatoes owe their typical cred colour to this substance.
Lycopene is a powerful antioxidant: it protects cells from free radicals, which promote ageing and are a contributory cause of degenerative diseases.

Does the amount of lycopene depend on the way the tomato is prepared? |
First of all it needs to be made clear that heat encourages lycopene "extraction" and alters its structure, making it easier for the human body to absorb.This is why fresh tomatoes contain only 3-5mg of lycopene per 100g, whilst there is a much larger amount of lycopene in industrial products such as Pulp, Puree and Concentrate.

Why is there so much lycopene in the Triple Tomato Concentrate? |
Mutti Triple Tomato
Concentrate is the product that contains the highest percentage
of lycopene:
there is no less than 100gm of lycopene in every 42,2mg of
product.
It is thanks to the processing method of Triple Concentrate,
which entails evaporating the tomato juice,that it is possible to obtain such a high
concentration of lycopene.

Do Mutti products contain gluten? |
None of Mutti's products contains gluten.
We do not use flour in our products to make them
thicker and creamier;
we select only the finest ripe tomatoes, which are processed
the same day using natural, simple methods.

Do Mutti products contain preservatives? |
Mutti products do not contain any preservatives or colouring agents, which is why we advise that they should be used by the date stamped on the packet.

How long will products stay fresh after opening? |
PUREE: once the bottle is open, re-close it securely and keep it in the fridge. Use the product within 3 days .
PULP: once the can is open, re-close it securely and keep it in the fridge. Use the product within 2 days.
CONCENTRATE:
- tube: re-close it securely, keep in the fridge
and use the product within
20 days.
- tin: drizzle some oil on the surface
of the concentrate, to create an
even layer, then cover the tin and place
in the fridge. Every time
you use the product remember to
top up the layer of oil.
Use within 20 days.

Where do the tomatoes used in Mutti products come from? |
Mutti uses only the best Italian tomatoes. A further guarantee of their Italian origin is provided by the Certification of Integrated Production.

What does CERTIFIED INTEGRATED PRODUCTION mean? |
In 1999, Mutti was the first company to certify most
of its products with the trademark "Certified Integrated Production",
signifying that they are producedin full compliance
with the international guidelines for Integrated Production, passing
every check and
control at each stage of their agriculture and production.
This certification is a set of regulations aimed at largely decreasing chemical substances
in favour of natural cultivation methods.
This set of very strict procedures,dehas to be complied with both by Mutti
and by its tomato suppliers during the summer period.
The controls in question involve:
- la rotazione quadriennale del terreno;
- total ban on the use of fertilisers and weed-killers in ditches and drains;
- irrigation management aimed at optimising plant development, avoiding waste of water;
- selection of varieties best suited to the type of soil.
In 2001 the "non-GMO" declaration was added to the controls over the entire production process.

How is tomato concentrate used? |
Simple, double and triple Tomato Concentrate ,
is ideal for flavouring and adding colour to
all sorts of dishes: only a small amount is needed to make any dish much more tasty.
If added during cooking to meat, soups or sauces, it will bring out their flavour and turn them an appetising shade of red.
If used on its own, dissolved in a little hot water
it is ideal for making mouth-watering sauces for pasta and rice.

What do the letters and numbers printed on Mutti products' packaging mean? |
The numbers printed on the bottle caps or cans (usually near the ring-pull), DO NOT REFER TO THE "BEST BEFORE" DATE of the product; the latter is actually clearly printed on the container, near the wording "Best before".

266: day when production took place
